When you want nice boiled eggs like for Deviled eggs for a party- the secret is not to boil them all at once-leave lots of room to move around in the pan also add 1 tbsp. of salt to your water they will peal better. Bring your water to a rolling boil then cover-turn off heat wait 15-20 min. then drain and cover with cold water-drain and cold water again- your yolks will be a pretty yellow not green and hopefully all in the middle of the egg Now while your pealing these put on another batch if need too. When cool-peal- crack the big end of the egg and use a thin small spoon upside down to get under the peal and lift off--nothing hurts worse than eggshell under a fingernail.
